I have a new infatuation called Pinterest.. I’m slightly addicted to it. I ALWAYS find new craft and decor ideas and new recipes and this just so happens to be a great recipe I found that another blogger had posted to Pinterest. I love this recipe- it’s easy to make, the ingredients are things I usually have on hand, and it tastes great. This is one of those great no-fail recipes and it’s a huge time saver for busy moms like me since it cooks in the crock pot. This recipe is from Tastefully Done, one of my new favorite recipe blogs.
Crockpot Chicken Tacos
4 uncooked chicken breasts
1 can Rotel (I used the one with chilis in it and it turned out great)
1 can black beans, rinsed and drained
1 can whole kernel corn, drained
1 packet taco seasoning
Place chicken breasts in crockpot. Sprinkle the chicken with half of the taco seasoning. Top the chicken breasts with corn, Rotel, and beans. Sprinkle the remaining seasoning on top. Cook on low for about 8-10 hours and then remove the chicken and shred it using 2 forks or whatever method you find easiest. Return the chicken to the crockpot and mix well.
I love this served on flour tortillas with sour cream and lettuce.. these chicken tacos are so good!
